Did you know we have a green roof at the hotel where we plant all sorts of flowers, herbs and fruits? In this green garden, we cultivate a variety of plants that we then use throughout spring, summer and autumn. Some plants even provide produce year-round.
In our garden, you’ll find fragrant herbs like rosemary, thyme, sage and chives. We also grow edible flowers such as violets. These add a fresh pop of colour to our cocktails and dishes. Because we love fresh fruits, we also harvest our own figs, strawberries, pears and apples. Last year, we used the apples and pears we collected in a special syrup for the New Year’s menu.
By sourcing from our own garden, we rely less on suppliers and lower our CO2 emissions. At the same time, we support local fauna and flora while our hotel guests enjoy the view of our little green paradise.
